Question: my parents don't have online accounts set up with any of the institutions they do business with. Since they have no online accounts, the hacker wouldn't see any of these institutions in their browser history. Is there a way for the hacker to find out a list of the institutions they do business with by using their SSN?

Their local bank only had $2500ish in it so we're assuming that's gone. Our bigger concern is Vanguard and Allianz, which have all their money.
!!!!! You need to go online NOW and make online accounts for them at all the financial institutions. All the major financial institution will let you do this without talking to anyone. The online creation dialogue will ask questions to verify identity and some will be like previous addresses or loans. You can probably two-factor them straight away to your phone number.

My parents were against online accounts until I convinced them that anyone with a little extra information could make an account without their knowledge.

Even if they don't use them you need them already created and sitting idle.
I agree with this. For all financial institutions that you can't reach via an emergency number or fraud number, set up their online accounts with 2 FA to your phone number. Since the scammer has their SS#, they could access their accounts before Monday, and you need to beat them to it. Have credit cards replaced asap and credit freeze so that no new ones can be opened. Also, check with SS to make sure that their funds aren't diverted to another account. I had to go in person to the local SS office for a relative.
