The dates December 20-Jan 5, is that actually feet on the ground or does it include your travel to-from Australia? With such a short time frame, trying to squeeze in New Zealand is not advisable, as you won't do it justice.
Just remember Australia is huge, with the majority of the population and sites being on the coasts. I imagine Sydney will be your base? To maximize your time, flying to other areas like Brisbane, Melbourne, Adelaide, Alice Springs, etc is recommended. If going to Canberra, it only a 3 hour drive from Sydney. Again, with such a short time frame, I would probably pick just one other area other than Sydney to explore.
Sydney itself is great, especially in the compact, very walkable CBD. The Docks, The Rocks, Opera House, Botanical Gardens, Barangaroo area, museums, Chinatown on the south end, etc are all in or adjacent to this area. Great, reasonable restaurants abound as there are influences from Malaysia, China, India and other areas. Taking the wonderful ferry system from Circular Quay exploring Taronga Zoo, Manly Beach, Watsons Bay, Olympic Park or many other areas is a breeze (plus,eliminates the need for a car) and can make for nice day.
A trip out to Katoomba and the Blue Mountains, just west of Sydney and accessible by train, might be a nice break from the city.
