Umbrellas usually require max coverage on auto first.

To the OP, civil litigation of this nature may require the parties to disclose all their assets. It sounds like you have no idea in that regard beyond estimating the value of their house. It might take a while to get (and lawyers) but that's a key piece of information that may dictate the next course. At least that was the case for a family member of mine.
Just the opposite, in civil litigation discovery of the opposing party's assets is generally forbidden.
That depends on the state.
