I'm not talking about spending money to save money, but buying things I hadn't planned on at stores I don't frequent.

Probably better in the long run not to worry about those sorts of deals. You probably save more by skipping the purchase altogether, if it's not something you were planning on buying. If it's stuff you would buy eventually, you might come out ahead with these deals, but there's also the time value of money and the value of your time, so trying to optimize this may be a fool's errand. I hope one of the links others provided will be a helpful resource.
